Vegan Peppermint Nog

Good Morning! I am currently munching on the most delicious banana bread I have ever eaten – Kokako All Good Fair Trade Vegan Banana Bread. We currently have a couple of large loaves left for $15 at the shop down from $22. Rush in if you can because Xmas won’t leave you a lot of time to get food for yourself (if you are rushing around making all the food that is!)

I haven’t had time to try the recipe that is today’s main feature, but knowing Angela Liddon, that woman just can’t do a single thing wrong. This will definitely be on the menu for my Xmas #4!! Kudos to Angela for the recipe and the picture.

Vegan Peppermint Nog

Ingredients:

  • 1/2 large avocado, pitted and frozen
  • 1 large banana, peeled and frozen
  • 1 can of full-fat coconut milk (400ml), chilled in fridge
  • 1 tbsp fresh lemon juice (about 1/4 of a fresh lemon)
  • 1.5 cups almond milk/soy milk
  • 1/2 cup pure maple syrup
  • 1-3 tsp ground nutmeg (to taste, add gradually)
  • 1/4 tsp cinnamon
  • 1/8th tsp ground cloves
  • 1 tsp pure vanilla extract
  • Cinnamon stick, for garnish
  • 1/4 cup-1/2 cup Bourbon (optional), to taste

Directions: Pit and freeze the 1/2 of an avocado and peel and freeze the large banana prior to making this recipe. Add the liquid ingredients into a blender and blend for about 10 seconds to mix. Now add in your frozen and dry ingredients and blend until smooth. Taste and adjust spices and liquids if necessary. You can adapt it to how you’d like it! Makes 6 cups. Serve with a cinnamon stick (optional). Serve immediately.

Note: This will not keep long, so please make it just prior to serving and serve immediately, very cold.

Last night was spent madly making Vegan Graham Crackers for our Nanimo Bars, then making the Nanaimo bars, as well as Thumbprint Cookies for my nieces gifts. My Husband will also be getting ready to make a Vegan Red Velvet Cake for my Mother’s Christmas, but before that, we will be having Vegan French Toast for Breakfast with Hubby’s Mother. I think Cookie Dough Shots will also be in the mix for my Dad’s Christmas….let’s see if we are still alive by boxing day first!
